Chateau de l`Abbaye Pouilly-Fumé Tradition 2017
The Abbaye's 120 acres of vineyards lie around the village of St Laurent in the East of the Appellation, Three soil types exist, 'Petite huite' which is composed of crushed crustacea shells, a Silex based soil and limestone. All of these add to the key mineral character of the wines, they are well drained soils on gentle undulations ideally matched to Sauvignon Blanc vines. Depending on the vintage, the fruit from these different vineyards can be kept separate or blended together.
Pascal and Patrice Morlat have invested in a brand new wine making facility which is housed in one of the ancient Abbey buildings. These Northerly French Sauvignons are all about freshess, lift and nervous energy, to that end it is all about preserving the fruit character that has developed in the vineyard. Pre chilling of musts, gentle vaslin pressing, low temperature, long fermentations, gentle filtration, nitrogen blanketing and all stainless steel equipment form the technical backdrop that helps preserve the natural energy of these wines without resorting to sulphur and other preservatives.
