Chablis Cuvee Prestige Domaine Saint Marc
Jean-Marc Brocard owns 120 hectares of vineyard across all appellations Bourgogne, Chablis, 1er and Grand Cru. His son Julien is his viticulturist and he is committed to managing the vineyards using organic methods already the vineyards are herbicide and pesticide free and some lots are farmed biodynamically. In Chablis 1er Cru, the essence of the wine lies in the balance between the creamy Chardonnay fruit and the slate-like, mineral character of the place. Chablis vineyards lie a long way north quite a lot further north than the rest of the Ctes dOr that makes up Burgundy, so there can be cool Summers and late frosts to contend with, but this northerly latitude contributes to Chablis unique poise and edgy mineral pleasure.
Jean Marc uses no oak ageing in the production of his Chablis. All wines are fermented and aged in stainless steel and this means that all of the character of the wines comes out of the vineyard. All lots are vinified separately so that these individual characteristics are truly understood.
Chardonnay makers in the New World often aspire to produce wines of the elegance of Chablis, but are very often thwarted by the sheer ripeness of fruit which masks the underlying minerality that Chablis wines display so well. Arguably, Chablis represents the most elegant, restrained Chardonnay wines produced anywhere in the world.
